We had a breakfast celebration for Liz today for her birthday. We had ricotta cheese waffles with real maple syrup, turkey sausage, scrambled eggs, freshly squeezed orange juice and coffee.
The table was set with a tablecloth, napkins and candles. We had a fire burning in the fireplace all at 7: 30 am. We had to eat early because Liz and Ron had class at 10.
A lovely way to start a birthday, if I say so myself.
Below is the recipe for the ricotta cheese waffles. I prefer the texture of these waffles to those made with egg whites. These are heartier and I like a good crunch when I’m eating a waffle.
I bought a waffle iron at a garage sale for a dollar. We have been using it regularly ever since and it works like a charm.

Ricotta Cheese Waffles
2 Tbsp. butter 1 3/4 cup flour 2 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. kosher salt 1 cup ricotta cheese 2 large eggs 1 1/4 cups milk
Preheat your waffle iron per manufacturer’s instructions.
Melt the butter and set aside. In a medium bowl, whisk together the flour, powder, soda, and salt to combine. In a large bowl, beat the ricotta for 1 full minute with mixer – it won’t be completely smooth. Add the eggs and beat for another full minute. When it is smooth & shiny looking, add the milk. Place the dry ingredients into the bowl with the cheese mixture and gently whisk to combine. Stir in the butter.
Prepare according to your waffle iron manufacturer’s directions.
