A Delicious Holiday Cookie Recipe

Today we made honey-sweetened orange cookies. They are cake-like with a cream cheese frosting. I highly recommend them. We made one batch and they were gone almost as soon as they came out of the oven. We have a request to make a double batch tomorrow.

Of course, we used fresh oranges from our orange grove, but any oranges would be fine.

These are wonderful with a cup of hot tea or coffee. They have just the right amount of sweetness to satisfy.

Try them. I think you’ll find them delicious.

You can also substitute lemon juice and lemon peel if you prefer.

Honey-Sweetened Orange Cookies

• Prep: 15 min. Bake: 10 min. • Yield: 18 Servings

Ingredients • 7 tablespoons butter, softened • 1/2 cup maple sugar • 1 egg • 1-3/4 cups all-purpose flour • 1 teaspoon baking powder • 1/2 teaspoon salt • 1/3 cup honey • 1/4 cup plain yogurt • 2 teaspoons grated orange peel

• ICING: • ½ package low-fat cream cheese • 2 tablespoons orange juice • 2 teaspoons grated orange peel • 1/8 cup honey

Directions • In a small bowl, cream butter and maple sugar until light and fluffy. Beat in egg. Combine the flour, baking powder and salt. Combine honey, yogurt, orange peel. Add dry ingredients to creamed mixture alternately with honey mixture, mixing well after each addition. • Drop by tablespoonfuls 2 in. apart on greased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks. • In a small bowl, cream the cream cheese, orange juice, and honey until smooth. Frost once the cookies have cooled; sprinkle with orange peel. Yield: about 3 dozen.
