Honey-sweetened pecan cookies


I made these cookies this evening. They have a cake-like texture and are delicious. With the pecan half on top, they also are a pretty holiday cookie. The recipe is below. I hope you’ll try these and let me know what you think.

Honey-Sweetened Pecan Cookies

• Prep: 15 min. Bake: 10 min. • Yield: 18 Servings

Ingredients • 7 tablespoons butter, softened • 1 egg • 1-3/4 cups all-purpose flour • 1 teaspoon baking powder • 1/2 teaspoon salt • 2/3 cup honey • 1/4 cup plain yogurt • 1/2 cup chopped pecans As many pecan halves as cookies

Directions • In a small bowl, cream butter, yogurt and honey until light and fluffy. Beat in egg. Combine the flour, baking powder, salt, and chopped pecans. Add dry ingredients to creamed mixture alternately with honey mixture, mixing well after each addition.

• Drop by tablespoonfuls 2 in. apart on greased baking sheets. Bake at 350° for 8 – 10 minutes, then add pecan half to each cookie before returning to the oven for 3 – 5 more minutes or until golden brown. Remove to wire racks.

Yield: about 3 dozen.
